Vegan Pesto

Buying products and the supermarket can sometimes be a little bit frustrating. Take  Vegan Pesto for example – It’s near to impossible to find store-bought pesto sauce without any parmesan. You can sometimes find a vegan option at Whole Foods or Urban Fare. Although these markets are great and carry a variety of vegan foods, they can also be pricey and aren’t necessarily within reach if you don’t live near a populated city. It’s for these reasons that I started to make my own sauces – they are easy to make, cost-effective and you have the satisfaction of having home-made sauce. 

Fresh Basil

I always have a supply of fresh basil in my home. Basil grows like a weed, grows all year round (as long as you move it inside in the cold months) and tastes so much better when it’s freshly picked. The initial investment is only around $10 and can give you fresh basil for years. 

Pine nuts or Walnuts

Pine nuts can be really expensive. I learned recently that they are hand-picked from pinecones from very specific kinds of pine trees in small regions around the world. For this reason, they are very valuable compared to walnuts. 

In this recipe, I’ve called for half and half, but you can add more walnuts and fewer pine nuts and vice versa if you are so inclined. 

Pesto Pasta

There are so many applications for pesto; from dips to spreads but the most obvious one is with pasta. You can make pesto pasta from zucchini noodles, carrot noodles, traditional and so on. My favorite is Pesto with Zoodles (zucchini noodles). Click here to learn how to make them.
