An easy, plant based, 'cheese' dip that is sure to please.

Vegan Queso Dip.. what can I say? I don’t think many people in this world don’t love this dip. It has so many applications. It’s a cheese dip on game night, a sauce on nachos, the cheese to your mac, amazing on steamed broccoli and cauliflower and so many more. Vegan Queso is also very customisable – it can be spicy or mild, rich or soft, thick or creamy. These are just a couple reasons why this dip is so popular.

Bad Reputation

Unfortunately, Queso dip is synonymous with unhealthy food and dairy. It’s often thought of as a comfort or cheat food and has dairy right in the name. Luckily for us vegans or those who are trying to consume less dairy there is a magical ingredient called Nutritional Yeast! Available in flakes or powder, this product adds a cheesy flavour to whatever dish you add it to. It is great on top of popcorn, in pasta, as ‘cheese’ sauce and so much more! And, because it is made of natural and unprocessed ingredients, this recipe is actually good for you! How good is that?

Creamy Cashews

If you are new to the vegan world you probably think that cashews are an unusual ingredients in a ‘cheese’ sauce. You will find that this ingredient becomes more and more prevalent in recipes that use cheese. This is because when they are blended, they have a creamy consistency that is similar with a full cream. The flavour of blended cashews is very neutral and easy to add flavour to making them very adaptable. Keep in mind that you should use raw cashews as they are healthier and don’t add extra ingredients to the recipe. It is also important to pre-soak cashews before blending – a minimum of 2 hours but overnight is best.

Ingredients

  • 1 Cup Hot Water
  • 1 Cup Soaked Cashew Nuts
  • 3 Tbs Nutritional Yeast
  • 1 Tbs Sun-dried Tomatoes
  • 1/2 Tsp Cumin
  • 1 Tsp Paprikia
  • 1/2 Tsp Chili Powder
  • Salt & Pepper to taste
  • 1 Tsp Chipotle Sauce

Instructions

1. Add soaked cashews and 1/2 cup of hot water in a blender. Mix and gradually add water until you reach a creamy consistency.
2. Add the rest of the ingredients and blend. Add more water if necessary.
3. Taste and add flavours to taste. Chili pepper for spice, chipotle and cumin or smokiness, salt for a richer taste, nutritional yeast for cheesiness.
